Hey everybody, it's Thursday. Just a quick recipe for you guys today. This is a salad that I like to make on occasion. I have adapted this recipe from a recipe that belongs to my friend Jill Coleman of Metabolic Effect. This salad is so satisfying that you will not notice that there is not taco shell!
1/2 pound ground turkey
1 tsp chili powder
1/2 tsp black pepper
1/2 tsp cumin ground
1 tsp olive oil in pan for browning.
Mix well and brown all these ingredients in a frying pan.
2 cups chopped baby spinach OR 2 cups 1/2 salad and 1/2 baby spinach
5 grape tomatoes halved OR 1/4 cup chunky salsa
makes two servings
In a bowl put a bed of which ever lettuce/spinach you prefer.
Top with browned turkey mixture.
Top with tomatoes or salsa
Top with shredded low fat cheddar cheese or the cheese of your choice.
Top with greek yogurt (for low fat high protein) or with sour cream (more fat less protein)
For variations, you can add a yellow pepper chopped, jalapenos sliced, avacado (of course!! lol) black beans.
It is a good salad with lots of protein and veges!!
