Fish or Crab Cakes

2 - 7 ounce cans of albacore tuna
2 eggs separated - Use the whites only discard yellows
1 cup plain bread crumbs
1/4 tsp old bay (very littlle)
1 TBSP mayonaise
1 TBSP finely chopped parsley

Combine all ingredients and mix well.  If the mixture is too dry you can add one more tablespoon of Mayo.

Heat a nonstick pan over Low heat.  Keep pan at low heat and add 1 pat of butter.

Meanwhile form small patties with your pointer finger and thumb,  see picture at right.

As butter melts put patties into butter over low heat and cook until lightly browned. 

Serve with Yogurt sauce:  combine 1/2 cup yogurt, 1/2 tsp lemon  juice, 1 tsp capers (optional) 1 tsp finely chopped parsley, pinch salt.  (completely fat free). 
**This recipe will work with Salmon and with crab.  I like to have lemon wedges on hand to squeeze over the finished crab cakes just before gobbling them up!  They will not last long. 
***Appetizers for appetizers use smaller rounds and make them bite sized!!  So good, low fat and full of nutritious omega 3's.
