New Herb Blog, That I just Love!

This came from an "Herb-Info" Blog that I find super informative.  I really love the way she things.  Frugally and in sync and flow with our natural world.

She has such topics as "How to Make Your Own Almond/Seed Milks", and "20 uses for Eggshells" also "How to save your own Heirloom Tomato Seeds"  Cool Stuff!!  check it out ... link is below the picture!

By the way I am definitely starting my basil seeds in these babies.  The calcium is great for a plants root growth and you and just put them straight in the pot or ground!  It doesn't get any better than that!  Thanks for visiting, Happy Holidays and ENJOY!

Quick & Easy Fritatta/Bonnie Style!

1/2 onion diced
1/2 red pepper diced
1 clove garlic diced
olive oil

6 eggs plus 2 egg whites
1/2 cup diced Shrimp -** see note
1/4 cup diced black forest ham
1/4 cup sharp cheddar cheese chredded
1/2 cup low fat greek yogurt

sliced compari tomatoes for the garnish

In small frying pan add olive oil and diced onion & garlic cook 1-3 minutes until beginning to clear.  add red pepper.  add some black pepper and salt.  cook another 2-3 minutes.  Remove and set aside

crack the eggs in a bowl and whisk until smooth. add salt and pepper, shrimp/ham/onion and pepper mixture and cheese.  You could use a white cheese, like provolone or mozzorella, however  I have sharpe cheddar on hand... so sharp cheddar it is!! 

Heat a large tall sided pan on the stove over medium heat, add 1 tbsp butter and slowly melt and coat sides and bottom of pan.  Cook gently over medium heat until cooked through, work the "fritatta" from the sides with a spatula.  I usually fold mine over when it is 90 percent cooked through and then let it sit on the stove - off heat - for around 5-7 minutes to finish cooking through. -keep the heat medium to medium low or the egg will not be fluffy or light. 


Now... back in the day, when I was young cooking with my Dad in good ole Chesapeake Virginia, we called this a omlet, nowadays, a fritatta.  You can also finish cooking it by putting it under the oven broiler if you have the right pan.  (non melting pan!!  lol)..  STORE in fridge and slice up - pizza style, prior to refrigerating so you can grab quick breakfast or lunch.
VEGE SERVINGS/LOW FAT/LOW CARB/HIGH PROTEIN... NEED I SAY MORE!!!  WOO... and bon appetit - btw, congratulations to me I stayed on my proper eating regiment with this meal!!

** These shrimp are a new shortcut I've found COSTCO has them for $10.00 for about a pound and 1/2 of nothing but lime garlic shrimp.  I use the oil in the shrimp and everything..  These are good for an all protein snack before bed.  Or for breakfast.   They are already cooked and ready to make a shrimp taco!!  Anything you like.  This was what I had left over this week from my son and I raiding them in the fridge every day!!

Note to Self, do not attempt to warm boiled eggs in microwave... They explode when you cut into them.....

That being said... ah hem... lunch today:

1 cup arugula
1/2 cup spinach (from neighbors garden!  yum)
2 boiled eggs - exploded
1/2 apple cut into bite size chunks

my dressing:  1 TBSP olive oil, lemon juice, salt and pepper and 1/4 tsp dried oregano.

Boiled Eggs with Homemade Dressing and Fruit

Ok, jump off the Cannellini Bean track for a minute.....one of my favorites.
Pictured here is a great breakfast or light lunch.  Low fat, nutritious and suprisingly satisfying!  Boiled Eggs drizzled with Lemon/Wine Vinegar homemade dressing & a sectioned orange!  Very good, filling, and satisfying and good for you Omega 3's, vitamin C perfect for breakfast, light lunch or a great snack!  **Any fruit will do!  xoxo to all Enjoy

Hard boil your eggs takes about 6-7 minutes.  Best way is to boil eggs for 2 minutes, then turn heat off and let the eggs sit for 10-12 minutes to finish cooking.  Peel and slice eggs, drizzle with up to 1 TBSP of
Lemon/Wine Vinegar.
PS.  The oranges are great with the dressing as well, scoop some of that delicious dressing with your orange section!  So so ~ very very good flava!  Enjoy!
