Note to Self, do not attempt to warm boiled eggs in microwave... They explode when you cut into them.....

That being said... ah hem... lunch today:

1 cup arugula
1/2 cup spinach (from neighbors garden!  yum)
2 boiled eggs - exploded
1/2 apple cut into bite size chunks

my dressing:  1 TBSP olive oil, lemon juice, salt and pepper and 1/4 tsp dried oregano.
