1/2 onion diced
1/2 red pepper diced
1 clove garlic diced
olive oil
6 eggs plus 2 egg whites
1/2 cup diced Shrimp -** see note
1/4 cup diced black forest ham
1/4 cup sharp cheddar cheese chredded
1/2 cup low fat greek yogurt
sliced compari tomatoes for the garnish
In small frying pan add olive oil and diced onion & garlic cook 1-3 minutes until beginning to clear. add red pepper. add some black pepper and salt. cook another 2-3 minutes. Remove and set aside
crack the eggs in a bowl and whisk until smooth. add salt and pepper, shrimp/ham/onion and pepper mixture and cheese. You could use a white cheese, like provolone or mozzorella, however I have sharpe cheddar on hand... so sharp cheddar it is!!
Heat a large tall sided pan on the stove over medium heat, add 1 tbsp butter and slowly melt and coat sides and bottom of pan. Cook gently over medium heat until cooked through, work the "fritatta" from the sides with a spatula. I usually fold mine over when it is 90 percent cooked through and then let it sit on the stove - off heat - for around 5-7 minutes to finish cooking through. -keep the heat medium to medium low or the egg will not be fluffy or light.
Now... back in the day, when I was young cooking with my Dad in good ole Chesapeake Virginia, we called this a omlet, nowadays, a fritatta. You can also finish cooking it by putting it under the oven broiler if you have the right pan. (non melting pan!! lol).. STORE in fridge and slice up - pizza style, prior to refrigerating so you can grab quick breakfast or lunch.
VEGE SERVINGS/LOW FAT/LOW CARB/HIGH PROTEIN... NEED I SAY MORE!!! WOO... and bon appetit - btw, congratulations to me I stayed on my proper eating regiment with this meal!!
** These shrimp are a new shortcut I've found COSTCO has them for $10.00 for about a pound and 1/2 of nothing but lime garlic shrimp. I use the oil in the shrimp and everything.. These are good for an all protein snack before bed. Or for breakfast. They are already cooked and ready to make a shrimp taco!! Anything you like. This was what I had left over this week from my son and I raiding them in the fridge every day!!
