Please give it a try. It sounds odd, but it is surprisingly good! High Protein and very low fat and very low carb. The only fruits that are low starch fruits and hence the only fruits in my diet plan are: PEARS, BERRIES, GRAPEFRUIT AND APPLES. I have had no problem whittling down my fruit utilizing these choices and since I can have all that I want... voila this works.
Green Protein Pancakes:
3 egg whites
1/4 cup cottage cheese
1/2 cup whole oats
Handful of spinach
Handful of blueberries - I used pears instead. I buy the no sugar added cup pears and that way there there when I need them! You can also use any berry.
You can cut the spinach also.
Blend all ingredients together in magic bullet or blender. Heat skillet over medium high heat. Spray or wipe pan with coconut oil and pour in batter to the size you would like. Cook until lightly browned and flip. Top with berries, thin sliced pears and low - sugar maple syrup. Or you can eat them like me with a little bit of butter only.
