Get your veggies... Veggie soup, but much more...

While trying to incorporate more vegetables into my diet, which by the way has curbed my appetite, I came up with a sort of Summer Vegetable Soup.  This recipe is much more than just soup.  You can serve it with your meat main dish, with eggs, with a few bites of rice.  This is very tasty, nutrituous, and easy to prepare.  It will also make use of the many summer veges our neighbors are giving us!

Zucchini
Onions
2 cloves garlic
Broccoli
Fresh tomatoes
Cauliflower
Can of chopped tomatoes
4 or 5 handfuls of spinach
5 or so sprigs of fresh thyme

I started with chicken broth from roasted chicken that I had made for my chicken enchiladas about 1.5 cups.  I added the zucchini and let that cook a few minutes. Add fresh ground pepper and salt, then added the onions and garlic.  I added a fresh tomato that I had left over from another recipe also.  Let that cook a few more minutes, then add the rest of the ingredients.  Let this simmer for around 15-20 minutes, add spinach, torn up if you like cook for one to two minutes.  Remove the the thyme stalks, the leaves should fall off.  And there you have a great vegetable base.

EGGS AND VEGE SOUP:
In a frying pan put around 1 cup or so of the above recipe.  let it warm, move to the side and leave a hole in the middle.  Put an egg in the hole, cook to your preference of doneness.  sprinkle a small amount of cheese over and slide onto a plate.  WOW was this good.  I love broccoli/tomato/egg combo at any time and in any increment.  So yummy and filling.d

POUR OVER 1/2 CUP OF RICE AND CUT COOKED CHICKEN BREAST
