So this is a great recipe. So very rich and a little creamy from the zucchini and butter saucce. No noodles here. Just zucchini a your noodles. I like to serve it with a sliced tomato as well. The fresh tomato with the tomato sauce brings levels of flavor to the zucchini and shrimp.
To start, get out your sauce from last nights meatballs and sauce. I like to run my immersion blender through what is left. I want a smoother sauce for this shrimp. Set sauce aside once you've run the immersion blender through.
In a large saute pan, heat 1 TBSP butter and some olive oil. Add the zucchini and saute for 3-5 minutes until slightly browned and softer, not mushy. Take some steamed shrimp and slice them lengthwise. This way you get more flavor on each shrimp. Add about 10 shrimp to the zucchini mixture, 20 pieces. Stir in over heat for one minute. reduce heat and add 1 more TBSP butter and about 1/2 cup of the sauce (more if you prefer more saucy), the sauce will add spiciness and garlic flavor. Add pinch of salt and pepper. Heat until the butter is just melted, remove from heat and serve with parmesian chesse sprinkled over the top. Oh, wow is this good. No need for noodles for me, but add some if you like! High protein, fresh made, low carb. Enjoy!!
