Hello everyone! The fitgredient I have chosen this week is the AVOCADO. I love the smooth texture of the avocado and the mild flavor that so wonderfully compliments tomatoes and cheese. The fruit has tons of potassium and fiber as well as vitamins B and E. The avocado an incredibly versatile fruit, you can use it as a main course, such as in the breakfast sandwich below, an appetizer, or as a spread, like mayo. However you use it, it is so much better for you than mayo, just sayin'! I love finding them just prior to ripe, when it is still a little green. Place them in a paper bag to ripen if you have underripe avacados.
STORE: Never store unripened fruit in the fridge. After ripening, you can cut them and always mix the avocado flesh with citrus to store in fridge. Lime or lemon juice will work to keep the flesh from turning brown. Which happens quick! I slice lengthwise, around the pit, and leave half of the avocado intact, pit in, to store. Use and citrus juice the other half and store in the fridge.

Breakfast Avocado Muffin
English muffin - whole wheat or regular
1/4 avocado or 5 slices of a regular sized haas avacado (around 2 Tablespoons)
Lime wedge
slice tomato
salt & pepper
around 220 calories/4.5 g fat
Toast English muffin, mix avocado with lime juice, spread on toasted muffin, add siced tomato, salt & pepper and voila! I also hit it with extra lime juice, adds some zing in the morning ya know wake up those taste buds.
I love this quick breakfast, it is light and just packed with flavor and good for you ingredients not to mention the superfood tomato and beneficial fiber! Enjoy!
Additions:
1 slice cheese - adds 5g fat and 70 calories, but also adds calcium
1 slice turkey bacon - adds 1 g fat and 60 calories
add sprouts - almost no calories
1 egg cooked - adds 6 g fat and 60 calories

Watching the wildcard playoffs today and made some avocado dip. Yummy with pita chips, tortilla chips or with celery.
Avocado Dip
1 whole avocado, sliced and mashed
Juice of 1/2 lime
1 clove of garlic minced
1 small tomato chopped
1 tsp minced onion
1/2 tsp salt
1/2 tsp pepper
Combine all ingredients with a fork...and enjoy!
