avocados - how to pick 'em...

 
First...Picking out a ripe avocado...

Look for even color depending on the variety, this could be all green or all very dark green.  Hold it in your palm and close hand it should be firm not squishy.
The avocado should not dent too easily when you pick it up.  If it does it is overripe and will spoil quickly.

Don't worry, if the avocado is unripe you can store it on the counter in a paper bag to ripen, usually over one night or two.  To accelerate ripening put a banana in the bag with the avocado.

Ripe avocados can be stored in the refrigerator for up to but no longer than three days.
If you are going to use the avocados in a few days, pick hard fruit and allow to sit and ripen outside of the fridge.
