No Carb Pancakes! This is not a drill!!

These are NO carb pancakes

2 over ripe bananas, mashed
2 eggs
1/2 cup almond butter or peanut butter
dash of cinnamon (optional)

Whisk together all ingredients.  I mean really whisk!  

Cook on a greased griddle or pan on low-medium heat.  For heart shaped pancakes, simply place cookie cutter directly on pan and fill with pancake batter.  Leave cutter on until it is mostly cooked.  Gently remove cookie cutter and flip pancake.

Serve with fresh banana slices, walnuts and warm honey syrup and enjoy!

** For all the frugal cooks out there, like me** This is a great way to utilize bananas that you have frozen just before they go bad.  In order to freeze bananas, take them out of the peel, wrap in aluminum foil and freeze em until you need em!!
