You're thinking Fit Food, right, she's doing pizzas this week. Well, stay tuned and you'll see how we Fantastic-ize and overhaul pizza to suit our healthy lifestyle! Trust me. : ) I'm heading to the grocery store this afternoon to gather some pizza ingredients.. Fresh ripe tomatoes, sweet onions/red onion/pineapple/capers/parsley/yellow/red/orange peppers/ artichokes/olives/low fat mozz cheese/parmesian cheese/small small amount of thin thin sliced low salt ham/anchovies
p.s. Costco has flat bread with rosemary and olives, I'll be using the bread as a pizza dough later this week.
The idea behind pizzas is whatever is in the fridge. Italians like to make something out of nothing. Today for lunch, I made something wonderful out of leftovers. I think it is in my blood that this makes me happy from the inside out and a huge smile comes accross my face when I look in the fridge and discover I have the ingredients to an impromptu lunch mini pizza like this with what I have on hand. Makes my day! ...I had some Costco flatbread left over from last night, a few slices of low salt ham left over from this week's lunchmeat and mozzorella cheese left over from the eggplant parmesian we made late last week (look for the recipe in this blog). I cut the flat bread in half and made two small "pizzas" with fresh tomatoes (...I got from the fresh tomatoes from the Farmers Market earlier this week! mama mia! they were ripe and sweet, red all the way through, beautiful... and it's February!!...), ham and mozzorella. Voila mini pizza in the toater oven.
I keep a lot of the items listed above as staples in my fridge. Always there.
