Today's lunch was great. I made my pizza here at work. I Just wrapped ingredients in foil or saran wrap to store separately and brought them to work. I used our work kitchen toaster oven, I think a toaster over in something you just simply shouldn't be without. Versatile, compact, cooks quickly toasts. I love mine.
I made this bread pizza out of a fresh tuscan bread that I picked up at our local Ollie's bakery. It is olive oil rosemary bread and it was magnificent. I put the bread in the toaster oven to start, meanwhile sliced my roma tomatos (still using the tomatoes I picked up at the Farmers market 10 days ago that'll tell you how fresh they are from the farmers market!) took it out of the oven, added my thick sliced tomatoes about 1/4 inch, and three onion rounds, put back in toaster oven for another minute, got out my cheese. Add the cheese and put back in the toaster oven for another minute to melt/brown the cheese. sprinkled with pepper.
Meanwhile I took out a small salad I made first of this week and brought into work. The salad, again, was made with the farmers market lettuce and parsley and peppers. Wow it was still lively and beautiful, check it out in my picture above! I took some peppers from the salad and last minute added them to top my pizza! E Voila Lunch! Total time about 4-5 minutes and wow was it good. The better the bread the better the pizza! I am satisfied and smiling!! :) Enjoy.
