Busy... Busy...

SKILLET PIZZA RECIPE - BASIC
Hi everybody, so busy here.  I haven't had time much to post the skillet pizza recipes the way I'd like to with variations and pictures and etc.  I really like to get into the kitchen, and on the grill while I'm posting and go through the cooking and tasting while I'm writing.  It just feels more authentic that way, however,  today i'm going to post the skillet pizza recipe - basic style.  I will be spending some time this weekend in the kitchen preparing the other pizzas with the delicious variations I've come up with so be prepared for a bunch!!

Onion, Mushroom, Prosciutto Pizza
Preheat oven to 500 degrees.
1 large onion, diced or julienned (your preference)
1 tsp olive oil
2 cups of cremini mushrooms, button will do
1 clove garlic minced
3/4 pound pizza dough (equal to one store bought package)
2 cups greated whole milk mozzorella or fresh mozzorella ball sliced thin
4 thin slices of prosciutto

In a medium skillet, saute onion with the olive oil for around 3 minutes.  Add mushrooms saute another 2 minutes.  Add garlic and saute another minute or so, until the garlic aromatizes.  Season with pinch salt and pepper.  Set aside
Put 1 tsp olive oil in pan and use your hand to coat the entire pan.  press dough flat in skillet spreading to the edge.  If it retracts from edge let it rest a few minutes before continuing, until dough relaxes and you can spread to edge.  spread 1 cup of cheese over dough, top with mushroom mixture, sprinkle remaining cup of cheese over.
Cook stovetop - over medium high heat until bottom of crust is golden brown, 4 to 5 minutes.  Transfer to hot oven and bake until edge of crust is golden brown and dough is cooked through about 10 minutes.
Remove from pan and drape prosciutto slices over the pizza.  serve!
