Zucchini Lasagna! Low Carb Style...

I spotted this recipe on my facebook feed.  I actually am planning on making this tonight (if I have any energy left...crazy day at work!).  So instead of shooting all of this over, I read through her recipe and all the important points are brought out. 

Important point #1.  Slice the zucchini with a mandoline or very sharp knife.
Important point #2.  Pan fry or grill your zucchini to help remove any extra water, or your lasagna will be too watery.  Place on paper towels after you pan fry or grill it.

MY TAKE...

I use fresh mozzorella and I use italian sausage instead of plain old ground beef.  Make sure to drain and de-grease your sausage on paper towels after you brown it.

I also do not use ricotta cheese in my lasagna any more.  You can adjust this recipe as needed for your taste!!

Skinny Taste has it right, you WILL NOT miss the pasta in this recipe!  So it is low carb, high protein and packed with good for you veges!
