Reworked Chicken with Roasted Vegetable Salad

In a small frying pan I warmed up some dried thyme, then added the roasted chicken from last night and added the roasted vegetables.  Added some fresh yellow pepper for crunch and served it on a bed of spring greens with Chipotle raspberry sauce on the side.  Oh my gosh was it good.  I was only missing a few sprinkles of feta cheese!  Darn!!  - but yes it was really good!! 

For my son I made a wrap with the roasted vegetables and chicken mixture with fresh pepper and bacon.  Really good also! 

I love these roasted vegetables, they are warm and make winter salads more tolerable.
