This is my Saturday night marinated flank steak with my high test version of caprese salad. I also stuffed some sweet and Jalapeno peppers on the grill for some extra spice and made Mike some of his favorite sauteed zucchini. I love this caprese salad because it is just right for a romantic Saturday night at home. Mike is flying in as we speak so I've go an hour and one half to get dinner ready and spruce myself up. (plus have a glass of wine!)
Start making your caprese salad. this one is so good that the cutting board with the leftovers on it even looks appetizing! yum. Perfect with a glass of wine before dinner!
High Test Caprese Salad
Ripe red tomatoes or whatever you have on hand 3 or so
I use marinated mozzarella balls that I find at costco about 10 or so split in half.
1 large clove of garlic minced
1 slice of lemon squeezed on top
pinch of salt sprinkled over that, mix this all up, I used my hands, the olive oil makes my hands soft. The olive oil in the marinated mozzarella balls adds to the caprese my style. Chill this for a little bit before serving. Half hour or so.
Flank Steak Marinade & Cooking Instructions:
2 medium flank steaks
1 cup of soy sauce low salt
1/2 cup of brown sugar
3 cloves of garlic mashed and chopped
1 Tablespoon of ginger
1/4 cup olive oil
Heat all in the microwave 1 minute - stir - another minute - stir.
Put flank steak in a bow that it can lay flat in and pour marinade over. add other flank pour marinade over. marinate at room temp for one hour.
Heat grill completely up. Add flank (after you've disposed of the marinade) steak to the grill and sear on both sides for 30 seconds. Cook on one side for 4 minutes turn over cook on the other side 4 minutes. This will produce a medium rare steak.
Let rest for 5 minutes before cutting. Slice on the off grain of the flank steak.

If you have a jalapeno pepper cooker for the grill use it, if not use a pan with aluminum foil maid row separators to hold the peppers upright. I pre cook my jalapenos on the grill for about 20 minutes. Take the hollowed out and seeded peppers off the grill and let cool a minute. Then stuff with some good quality pimento cheese. You can try chunks of mozzarella or cheddar and crumble some bacon bits in there as well. Tonight, hmmm, I think I"ll add some bacon cooked and crumbled into small pieces. I'll add this to the pimento cheese prior to stuffing. The just cooked pepper will melt the cheese and yum!!! So good. The sweet peppers were the best!
