I'm not sure if you can classify this as a salsa?! I serve this over warm rice and check out the variations below... so very bright and good, with a variety of favors, you have the sweetness of the corn, the earthiness of the bean, the bright flavor of the lemon and the parsley and the smoothness of the olive oil! Wow, just action packed food and so many ways to incorporate this into your breakfast lunch or dinner, serve over eggs, on a wrap, on top of a slice of fresh mozzarella. I could go on!!! So so good for you too!!
Tomato Black Bean Corn Salsa
2 roma tomatoes, diced
1 Can black beans, rinsed and drained
1 TBSP Extra Virgin Olive Oil
2 ears of corn, boiled 8 minutes, cooled and kernels sliced off cob (canned or frozen works as well)
Juice of one lemon
Handful of chopped fresh parsley or cilantro whatever you find fresh
sea salt to taste
1/2 tsp pepper
In a medium bowl, go down the above list, adding each in order and stir to mix well. Chill overnight for better flavor or if you can't wait like me, eat right away!
I serve this with warm rice, you can use it as an addition on a wrap, it can also be used as a salsa with pita chips or you can eat it with a spoon on its own.
Variation: Bake chicken breast and add to this for added protein.
Wrap Variation: wickie, wickie... haha (lol :) Add the salsa, chicken and greek yogurt on a wrap, and you've got a power packed healthy wrap!!!
