Onion, Mushroom and Proscuitto Skillet Pizza

 
1 Tbsp butter
1/2 pound cremini mushrooms, sliced
1/2 medium onion thinly sliced ~ or more!
Olive Oil
3/4 pount pizza dough
4 slices or prosciutto ham
1 cup Mozzarella cheese
1/2 cup Parmesian cheese

Preheat oven to 500 degrees.  Slice about 1/2 to one medium onion (to taste) really thin,  and add to a saute pan with 1 tbsp of butter.  cook for about one minute.  Add 1/2 pound cremini mushrooms sliced to pan and cook another 2-3 minutes until they begin to turn brown.

Add 1/2 teaspoon of olive oil to a 8 or 10 inch cast iron skillet.  Use your hand and cover the entire pan with the oil.  Use one serving of prepared pizza dough.  See Post from March 6th for recipes or use store bought premade pizza dough.  spread the dough over the bottom of the pan.  Do not make a "lip" up the side of the pan.  Sprinkle with 1/2 cup mozzarella cheese add the mushroom and onion mixture, add 1/4 cup parmesian cheese and top with other 1/2 cup of mozzarella cheese.  (total fat for cheese 2 grams for the parmesian, 14grams for the mozzarella you can get lower fat mozz if you like). 

Put on Stove top over medium to medium high heat for about 4-5 minutes or until bottom is golden brown.  Remove from heat and put cast iron skillet into the preheated oven until pizza is cooked through, about 10 minutes.  Remove from oven - carefully pan is sooo hot!  ...and layer proscuitto slices over the top of the pizza and slice to serve!!
