This is so good and truly rivals chickpea hummus in many ways. Cannellini the magical bean.
- 2 15-ounce cans cannellini (white kidney beans), rinsed, drained
- 1/2 cup fresh lemon juice
- 1/2 cup tahini* (sesame seed paste)
- 3 garlic cloves, minced
- 1 1/2 teaspoons chili powder
- 2 tablespoons minced fresh thyme or minced fresh parsley or cilantro-your taste preference
- Salt & pepper to taste
Combine all ingredients in a mini chopper or food processor until smooth.
Good with vegetables or toast points, or pita crisps. Suggestions, with steamed potatoes, green beans, carrots, artichokes, broccoli steamed, cauliflower steamed. (lightly steamed that is!)
