Ah dinner! It is just me tonight. This is a simple simple meal for dinner with wonderful smooth flavor and absolutely great to have on a cold evening. The broth is rich and creamy and great with a little italian bread toast. I will reserve 1/2 of this for lunch tomorrow!
1 can cannellini beans (15 ounces)
Or 2 cups fresh made cannellini beans
1 cup chopped baby spinach
2 cups milano tomatoes - sliced lengthwise
1 tsp olive oil
salt and pepper
Makes 2-3 servings as a main dish, 4-5 as a side. (double ingredients for 4 main dish servings)
Put beans into a saucepan, heat to boiling over medium heat. Add the chopped tomatoes and the olive oil, let these simmer together over low heat for about 5 minutes. Remove from heat add the baby spinach and the salt and pepper. Let this sit for 2-3 minutes to blend the flavors. Serve with a slice of french bread for dipping the sauce. Wonderful, comforting, just plain good food.
