SUNDAYS! Football, Roast and Chicken and Rice Leftovers!

Hello hello!  This week ended up busier for me that anticipated, birthday party, sinus infection (aughhh), work, yard work and cold outside.  I love getting into the kitchen on Sundays and putting together several meals for the week.  This is MY time, to relax, be creative, cook and watch some football in between!!

First for the leftovers, I made chicken and wild rice on Friday.  We have been so busy we haven't had the chance to eat it.  So in order to utilize this great chicken dish, I'm going to turn that into chicken, wild rice and spinach casserole!

Then, we went to a birthday party on Saturday where we cooked an entire pig, through Friday night and Saturday.  WOW was it good!  So good.  We worked all day chopping up the pork for bbq and pulled pork and I saved the bones to make a pork stock to freeze for potato and cheese soup and to combine with other stocks for chicken soup or vegetable beef soup or stew!  It adds additional depth to your chicken soup, you just wont' believe it.  Reminds me of using several different types of meat for my meatballs, say ground pork, turkey and beef.  There is just a depth there!  I love it.  mmmmm!

At the store I found sirloin tip roast on sale and I couldn't pass it up for $2.29 per pound.  Such a good deal.  My family loves roasted beef stew, so it will be a great addition to my Sunday cook-a-thon!!
