Crock Pot London Broil... Boring or NO?!

Answer, NOT Boring... Hi thanks for visiting!  In my cooking life, I've made London Broil many ways.  I recently came across a new way in a crock pot. This intrigued me because typically I use the crock pot for other beef cuts, not London Broil.  I always marinate and grill...At any rate, a friend of mine brought a London Broil Crock pot dish to our gathering last week.  The recipe looks like this:

1 London Broil, cut in 1/2 and put into a large crock pot
1 jar of pepperocini peppers with it's juice
Cook on low 4-6 hours until tender and falling apart

Well, the beef was really peppy, I used it as a base for a "nacho" style chip and put shredded cheese on each Scoops chip.  Pretty good.

I realized though that I could do a LOT with this LOW FAT meat that really has a nice taste to it without being marbled (aka without being fatty).  YOU CAN REALLY DO A LOT WITH THIS LITTLE LONDON BROIL STARTER RECIPE.

So.... my mind is racing now.  I decided I don't like the peppers, too, ummmm peppy.  (giggles).  There is a place for them, but this beef is just too tasty to waste on nachos.  yes you can do it, but here's what I came up with.

#1 - I like this one!!!  
London Broil in it's own gravy with mushrooms, onions and sweet potatoes.  Cover with beef broth, (2 cups).  Season with Thyme and oregano.  If you are a garlic fan, slice a few and toss em in!  pepper to taste, add salt post cooking if needed.

Add the sweet potatoes, onions and mushrooms at the last 1.5 hours, separate out the sweet potatoes when done and add melted velvetta cheese on top of the pull apart London Broil and mushroom gravy mixture and there is The Best, Mouthwatering Good, Sunday Football Sandwich ALIVE!!!   My mouth is watering now actually just writing about it.  With a nice side of sweet potatoes to offset the cheesy, savory roast.  I cannot wait to make it on Saturday for Sunday Football Games...Lets take it a liTTle bit farther.  While that's cooking, slice another onion in rings, and a red or yellow pepper in strips, saute in 1 tsp of butter and a drop of olive oil until al dente.  For LOW Fat, your meat is already low fat, add low fat cheese instead and serve naked.. i.e., no bun! Enjoy you guys!!

#2 - London Broil with Cauliflower and red peppers.

With this one add a package of Italian seasoning to the mix and one package of brown gravy mix and two cups of water.
**Don't forget to add the veges late in the game or they will simply disintegrate.  I like to gently lay them on top and they pretty much steam.

#3 - Traditional Crock Pot London Broil
A regular, you can put a can of cream of mushroom, a can of stewed tomatoes and 1/2 cup red wine for a nice stew like meat to serve with mashed potatoes, green beans, very Traditional London Broil!

** keep in mind you can serve naked or with bun..  up to you and with low fat cheese you've made it high protein low fat!  Except traditional where you get the cream of mushroom ration of fat.
