So pork stock, who'd a thunk it! It is really flavorful. We went to a birthday bbq for a dear friend on Saturday night and they cooked an entire pig over an outdoor cooker overnight, one of my favorite flavors! It turned out so deliciously tender, juicy and good! I asked for the bones to experiment with making some pork stock. I hate to just toss all those stock bones, and smoky, porky flavors. On Sunday before the first football game at 1:00 I put the bones in a stock pot and made some stock.
It came out rich and full of flavor with a hint of pork, a hint of smoke and deeply rich and gelatinous.
PORK STOCK RECIPE:
Put bones in a large stock pot, cover with water, add any variation of the following:
Celery 2-4 stalks cut in thirds
Carrots 4-6 cut in half
3 peppercorns
1 bay leaf
4 Sprigs of Fresh Thyme
Fresh Sage leaves - if you have any this is a great addition depending on what you'll use stock for
Bring to a boil, spoon off any frothy stuff that floats on the top of the water. Lower the heat and cook at a slow simmer for 3-4 hours. Dispose of all the bones and everything you added until you're left with just the broth. Cool. I put mine in the freezer in several quart zip lock bags. You can also put it into ice cube trays, once frozen empty cubes into zip loc bags. That way you can use a little at a time of this potent broth!
Ways to use pork stock!
Baked potato soup - my favorite use. So rich!**
Chicken stock in soups, add pork stock and lessen chicken stock used, adds good depth of flavor
Instead of "cream of" soups in casseroles
Asian cuisine - pork stock is used in many soups, i.e., miso. Asian noodle soups.
Stir Frys - Use it instead of oil or use less oil in stir frys to add more flavor and moisture.
Thanksgiving Stuffing recipes, use pork stock instead of water to moisten your bread cubes.
