Chicken Enchilada - the next day

Today I am bringing out a 12 oz portion of the chicken base I prepared yesterday, see post below.

1 orange pepper chopped
1/2 large onion - chopped
1 tbsp. olive oil in pan
3 cloves garlic

Sautee the above until you reach your desired doneness of the onions and peppers. Add 12 oz of the chicken enchilada base prepared yesterday.

Then  I chose to add:
1/2 cup corn
1/2 cup black beans
1/2 cup enchilada sauce
