Pork Loin with Mango Salsa, Ole!

Today in the mood for something different.  Pork loin is always great to work with and is quick to season, no overnight marinating!  I also ran accross a recipe for mango salsa.  I tweaked it a little to leave out the jalapeno, but you can add if you like.
Pork Loin Marinade:

1/4 cup soy sauce
3 cloves of garlic smashed and diced
4 Tablespoons red pepper jelly or to desired sweetness
Heat the above & pour over pork loins- two
Marinate 30 minutes to 1 hour turning occasionally - discard marinade

Mango salsa:

2 medium mangos or 1 large - peeled and cubed bite sized
1/4 cup minced onions
1/4 cup diced yellow pepper/or red pepper
3 Tablespoons lime juice
salt and pepper to taste

Combine all of above ingredients and refrigerate one hour ahead at least.

When the pork is ready to go on the grill, heat grill all the way up.  I have a four burner and I turn them all on high, close the lid and let it get super hot.  After the grill is hot, place the pork loins on the hot surface and turn it so that all sides get seared.  This will take approximately 45 seconds per side.  Reduce the heat on the grill and set the pork on one side for 6 minutes, turn over and cook for another 5 minutes turn a 1/4 turn cook 5 mins on side and same for other side.  Remove from the grill.  Cover with aluminum foil and allow to rest for 5-10 minutes.

Serve pork loin with mango salsa and if you like rice or a side salad. 

*** the mango salsa works really nicley on top of a salad - instead of dressing!  MMMmmmm and smile and enjoy.  Have a great evening you guys.
