Tzatziki is one of the most versatile and tasty greek yogurt recipes. I use it almost like a condiment! And mostly as a base in my sandwich wraps instead of mayo and cheese, kicks roast beef sammich right up! It is wonderful to dip chicken bites in, or to drizzle on chicken or steak kbobs it blends nicely with the juices of meat. I have also used it as a dip for my three meat meatballs. Use it as a chip dip/pita chip dip and just to have out randomly at parties, works really well a vege tray!
1 medium cucumber, peeled, seeded, shredded, and squeezed dry in a kitchen towel
2 C (16oz) Plain 0% fat Greek Yogurt
2 tsp fresh lemon juice
1/4 tsp salt
2 garlic cloves, minced or pressed, I use my garlic press usually
1 Tbsp extra virgin olive oil
1 Tbsp red or white wine vinegar
Combine all ingredients and refrigerate before use. I suggest if you are having a party, that when you're making a vege or meat tray that includes tzatziki, put some out and leave part in the fridge tzatziki is best chilled!
