Caprese Salads

Well guys since it is 70 degrees here today on February 1, 2012, I have decided to make up a simple CAPRESE SALAD for myself for lunch. 
Let me tell you something about caprese salads.  They look simple, but yet they are filling in a rustic way.  Each element whole and beautiful on it's own.  Caprese Salads can be made up of anything or combination of things you choose.  That is the pure beauty of it.  And satisfying beauty of it!

Today I made 1/2 avacado, 4 fresh mozzorella balls, and some fresh fried pita chips from Fresh Market.  Sprinkled with pepper.  Eaten at my desk, I enjoyed every bite while writing to you guys today. 

Since we just went to Costco, tonight I plan on putting together a plate for the boys and myself....
Sliced Cucumbers
Sliced yellow pepper
Fresh Italian bread rounds
and last but not lease mozzorella balls drizzled with olive oil and sprinkle with fresh ground pepper if you like a shot of fresh lemon juice blends the flavors slightly and makes a sort of salad dressing with the olive oil, great to dip your mozzorella in or your bread.
The bread is to sop up the juice on the plate, once the juices from the ingredients mix, my favorite part of any caprese salad, the juices on the plate!  yum  great finish for a wonderfully tasteful and simple meal.
Caprese salads are usually thought of as tomato, mozorella, basil, and olive oil.  Caprese salads in Italy can be made up of anything, grilled marinated artichoke hearts, tomatoes, olives, zucchini, anything you enjoy!!  So step out of that comfort zone and Caprese salad it up!!  love it, later guys.
